To be seated at a Sephardic table is to bear witness to centuries of a captivating cultural heritage over?owing with traditions, festivities, symbols, superstitions, stories, fragrances, tastes and culinary secrets – all handed down from generation to generation.

Following the expulsion of the Jews in 1492 by King Ferdinand and Queen Isabella of Spain, JudeoSpanish communities spread to new shores, bringing with them their unique cuisine and traditions. As they migrated from place to place, their foods naturally evolved into a wonderfully complex fusion of ?avours incorporating Turkish, Greek and African elements.

One of the more in?uential of these Judeo-Spanish communities was established during the height of the Ottoman Empire on the island of Rhodes, where Jews were welcomed and recognised for the multitude of skills they could bring. Before long, Rhodes became known as La Chica Yerushalayim (the Little Jerusalem), and the community became a lively centre of Sephardic Jewish creativity with its own distinctive cuisine and customs.

With the advent of a new wave of political turmoil in the early 20th  century, Judeo-Spanish communities once again migrated, this time to the Americas, Belgium, the Belgian Congo, Southern Rhodesia and in later years South Africa. With these moves came a new set of in?uences and traditions, further expanding the Sephardic repertoire.

Deeply inspired by her roots and constantly immersed in its traditions, food writer, artist and Sephardic cuisine a?cionado Stella Cohen has set out to record the legacy of this fascinating but vanishing world. In doing so, she tells the story of her own family’s cultural journey from Rodos (where her greatgrandfather, Yaacov Capouya, was the esteemed sage and Rabbi of Rhodes) to Southern Rhodesia (today known as Zimbabwe), where she has raised her family to continue the Sephardic tradition. In 1986, Sephardic Cuisine, co-authored by Stella, a concise spiral bound cookbook, was independently published under the auspices of the Sephardic community of Zimbabwe and made its way to homes around the world and was reprinted multiple times. For the past 25 years, Stella has further explored this age-old cuisine, re?ning recipes and cooking techniques to suit the contemporary kitchen.

Stella’s Sephardic Table is a treasure trove of inspiration for the soul, ?lled with ?avourful, easy-tofollow recipes, all lavishly illustrated and garnished with anecdotes, Ladino sayings, stories and rare insights into family-cherished tips and hints traditionally passed from mother to daughter.

ABOUT STELLA

steSephardic cuisine expert, artist, textile designer and cookery writer, Stella Cohen is a passionate ambassador for the Jewish community, dedicating her life to the celebration, preservation and education of Sephardic values and traditions. Stella’s heart lies in Southern Africa as well as in the Mediterranean, as she was born and raised in Zimbabwe and has a family tree entrenched in Sephardic history. Her parents originate from Rhodes, Greece and Marmaris, Turkey and she is the greatgranddaughter of Yaacov Capouya, the Rabbi of Rhodes.

Stella’s art re?ects the journeys of her ancestors as well as the mysticism and symbolism of women and their archetypes in other Sephardic cultures. She has exhibited her work throughout the world, especially in the United States.

Stella is the honorary Life Chairlady of the Sephardic Hebrew Congregation of Zimbabwe and has held positions in humanitarian work, including a project to establish the ?rst eye clinic in Zimbabwe in conjunction with the Joint Distribution Committee of New York.

In 1999, Stella was honoured as a ‘Woman to Watch’ by Jewish Women International. Stella lives in Zimbabwe with her husband, Victor, and loves nothing more than to prepare a lavish Sephardic table for family and friends, including her two children and grandchildren, who live in New York.

Marc Hoberman is a world-renowned photographer, designer and author and produced more than 60 photographic coffee table book titles internationally on subjects ranging from travel to wildlife to food through the publishing company HOBERMAN which he co-founded.
